Empanadillas Kikuet

Fifty years ago, a man named Enrique "Kike" Mangual Flores was bestowed with a gift that would touch the lives of countless people through the exquisite gastronomy of Puerto Rico: Empanadillas Kikuet. This man, my grandfather, toiled tirelessly from a young age to support his family. His dedication and perseverance bore fruit, blessing him abundantly until his final day on earth.


It fills me with pride to carry on the legacy of this diligent man by sharing his story. As a tribute and a gesture of gratitude, I dedicate this blog post to him.


For as long as I can recall, my morning ritual has revolved around indulging in a savory delight: the pizza empanadilla, a staple treat found in bakeries across Puerto Rico. Thanks to my grandfather, I had the privilege of starting each day with a delicious hot, freshly made pizza empanadilla.

To provide a bit of background on my grandfather, he was born in Carolina, Puerto Rico, on March 9, 1947, into a poor family. He was the youngest of six siblings, raised in a household where his father worked as a farmer, cultivating crops to sustain the family, while his mother tended to the home and cared for their children. Without the opportunity for formal education, my grandfather began working alongside his father at a young age, driven by a strong sense of responsibility to support his family. Even from his earliest years, he harbored ambitions of entrepreneurship and dreamed of becoming a successful businessman.

Years later, my grandfather crossed paths with the best business and life partner he could ever hope for: my grandmother, Olga Ruth Cardona. Together they founded this amazing business where they blessed the tables of many people.

My grandparents, fueled by unwavering determination, embarked on the challenging journey of entrepreneurship. With three daughters to support, they devoted themselves tirelessly to building a better life. There were no breaks for them as they poured their hearts and souls into their work. Over the years, their efforts bore fruit, and their small enterprise blossomed into what we now recognize as "Kikuet." It's a testament to their resilience, perseverance, and the sacrifices they made for their family's future.


It's truly an honor to be part of such a remarkable legacy and to call him my grandfather is a source of immense pride. His story serves as an inspiration for generations to come, reminding us all of the power of determination and the beauty of love and commitment.

Reflection


As my grandfather used to say "Exito es servir con honestidad" meaning "Success is serving with honesty" and I think that is beautiful.
